Our third Freezer Meal Exchange was held at Stephanie Winder’s in Draper. Here are our vegetarian recipes:

Kelly Wood – Vegan Mexican Quinoa

Juliette Marie – Creamy Spiced Cauliflower Soup and Lentil Hand Pies with Walnut Pesto

Tanya Harris – Sweet Potato and Black Bean Enchiladas

Stephanie Winder – Thai Pineapple Curry

1 Tbs Olive Oil

1 yellow onion, sliced in half moons

1 red bell pepper (julienned)

2 C broccoli, cut into bite sized chunks

1 small fresh pineapple, cut into bite sized chunks

1 Tbs Thai red curry paste (adjust according to taste)

1 can coconut milk

2 Tbs light brown sugar

2 Tbs soy sauce

Juice of one lime

1/4 cup cilantro leaves or basil leaves, chopped

Crushed red pepper flake to garnish

Serve over steamed brown basmati rice and sprinkle with red pepper flake.

Emily Courage – Dump Taco Soup

Prep Time 5 Minutes

Cook Time Crock pot:4 hours on high/ 5-7 hours on low Stovetop 30 Minutes, add 14oz water to ingredients if you’re stoving it

Serves 10


  • 2 Tablespoons Dried Minced Onion
  • 1 can (14 Oz. Size) Petite Diced Tomatoes
  • 1 can (15 Oz. Size) Corn, Drained
  • 2 cans (10 Oz. Size) Tomatoes And Green Chilies {mild}
  • 1 can (14 Oz. Size) Cut Green Beans, Drained
  • 2 cans (15 Oz. Size) Black Beans, Rinsed And Drained
  • 1 envelope (about 1 Oz. Packet) Taco Seasoning
  • 1 envelope (about 1 Oz. Packet) Ranch Dressing Seasoning
  • 2 cans (5 Oz. Size) Chicken chunks
  • 1 cans (14.5 Oz. Size) Chicken Broth
  • 1 cans (14.5 Oz. Size) Beef Broth
  • 1 Tablespoon Steak Sauce
  • 1 dash Worcestershire Sauce
  • Sour Cream, Shredded Mozzarella Cheese And Tortilla Chips, For Garnish (optional)

Preparation Instructions

In a large soup pot, saute onion over medium heat in the butter; cook until softened. Dump all of the other ingredients (except garnishes) in the pot, draining and rinsing as directed. Simmer until ready to serve, about 30 minutes. Tastes amazing with sour cream, mozzarella cheese and crushed chips!

Yvette Pierce – Black Bean & Beef Chilli

  • 1lb. ground beef
  • 2 Cans Black beans, drained
  • 2 cans kidney beans, drained
  • 1 can corn, drained
  • 1 onion, diced
  • 1 T. garlic
  • 1-3 Jalapenos, diced
  • 1 c. green peppers, diced
  • 2 tomatoes, diced
  • 1 c. roasted tomatoes
  • 2 cans peeled tomatoes
  • 2 T. chilli powder
  • 2 T. cummings
  • 1 T. paprika

1. Brown and drain ground beef, add to Crock Pot.

2. Optional – for more flavor saute garlic and onions in 2 T. of vegetable oil and add to the Crock Pot.

3. Or you can just add them into the Cock Pot raw.

4. Blend peeled tomatoes into a smooth consistency and add to the Crock Pot.

5. Stir in all vegetables and seasoning, salt and pepper to taste. Cook on low for 6 hours or on high for 3 hours. Makes approx 18 – 1C. servings. Freeze for later. We add Greek yogurt, shredded cheese and chips (great for taco salad).

*Note you don’t have to cook it if you are going to freeze it.
