Crock Pot Vegan Quinoa Chili

Ingredients
  • 1 can (15oz.) black beans, drained and rinsed
  • 1 can (15oz.) pinto beans, drained and rinsed
  • 2 cans (10oz.) Original Rotel
  • 1 can (4oz.) diced mild green chiles
  • 1-1.5 c. frozen corn
  • 3 c. vegetable broth
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 2 tsp. garlic powder
  • 2 tsp. cumin
  • 2 tsp. chili powder
  • 3/4 c. quinoa, rinsed
Optional Toppings
  • Avocado
  • Mild cheddar cheese, shredded
  • Tortilla Chips
  • Sour Cream
Directions
Combine all ingredients in a Crock Pot. Cook on high for 3-4 hours or low for 6-8 hours.
